So Vegan Summer ended several months ago but Brayden and I have been throwing around the idea of doing a round two, especially since winter offers lots of interesting vegan options. I tend to enjoy a lot of soups and comfort food this time of year which add a new dynamic. I was also gifted a Ninja blender for Christmas and wanted to try out some raw meals. He join Boston Organics and had been doing quite a bit of cooking as a result. I plan on doing the same.
Until we kind fo figure out where we want to go from here, I would like to use this space to post some recipes I’ll be trying out for the new year. One of my resolutions was to have at least one raw meal or smoothie meal per day. I tend to eat greasy breakfast sandwiches or bagels in the morning when I don’t have time to make something so ideally I’d be replacing breakfast with a fresh smoothie or some kind of fruit assortment. 2013 will be a year of DISCIPLINE.
The first I tried out today is supposed to taste like a Blueberry Muffin and to some degree, it succeeds. This recipe was taken from the healthful pursuit blog. I modified it a bit since I didn’t have two of the ingredients. I didn’t add the vanilla protein powder and I subbed out the vanilla extract for a little agave nectar because my almond milk was already vanilla flavored. The way I prepared it was not raw because I used a pre made almond milk and I added a few drops of agave nectar for taste but if you made your own almond milk and passed on the agave, it would be raw. Also, I used steel cut oats since that’s the only kind I keep around which gave the smoothie a chewy texture despite soaking them overnight. I’d probably either pre-blend them before adding the other ingredients or switch to rolled if I were to try this again. The chia seeds were interesting in the blend since they added a lot of thickness but I feel like I didn’t blend those enough either. Well, there’s always next time.
